I liked Mike Fraser, Bob Rock, and Andy Johns for drum sounds.
Quincy Jones was great up through around 1983.
I like Bill Bottrell for recording vocals and dryer guitar sounds.
Max Norman and Ron Nevison always got good guitar sounds but weren't so great with the rest of the band.
Jon Brion gets great performances out of whoever he decides to record. Same with Ted Templeman.

Ones I don't often like: Rick Rubin, Toby Wright, Kelly Gray, Tom Werman, and a few others. Lots of people like Martin Birch, and I'm not a big fan of his sound even though he's done some classic albums.
